2 Sheets, 1 Oven Chicken Dinner

Ingredients

  • 1-2 lbs boneless skinless chicken thighs

  • 2 medium sweet potatoes chopped into small cubes

  • 1 head of broccoli chopped into bite sized pieces

  • 4 large carrots peeled and chopped into ½ inch pieces

  • 3 tablespoons avocado or olive oil

  • Salt and pepper to taste

  • Green Goddess seasoning blend

Directions

  • Preheat oven to 400*F

  • Pat chicken dry and place in a large bowl

  • Cover chicken with 1 tablespoon oil and enough seasoning to cover all thighs and mix until well combined

  • Put chicken on a baking sheet and set aside

  • Place potato cubes into a large bowl, cover with 1 tablespoon oil and salt and pepper to taste, and mix until well combined

  • Put potatoes on a separate baking sheet and set aside

  • Place broccoli and carrots in a large bowl, cover with 1 tablespoon of oil and salt and pepper to taste, and mix until well combined

  • Put vegetables on the same sheet as potatoes

  • Bake both sheets in the same oven for 20-30 minutes

  • Mix potatoes and vegetables periodically during cooking time

  • Chicken is done when it reaches an internal temperature of 165°F

  • Potatoes and vegetables are done with they are browned
