2 Sheets, 1 Oven Chicken Dinner

Ingredients
1-2 lbs boneless skinless chicken thighs
2 medium sweet potatoes chopped into small cubes
1 head of broccoli chopped into bite sized pieces
4 large carrots peeled and chopped into ½ inch pieces
3 tablespoons avocado or olive oil
Salt and pepper to taste
Green Goddess seasoning blend
Directions
Preheat oven to 400*F
Pat chicken dry and place in a large bowl
Cover chicken with 1 tablespoon oil and enough seasoning to cover all thighs and mix until well combined
Put chicken on a baking sheet and set aside
Place potato cubes into a large bowl, cover with 1 tablespoon oil and salt and pepper to taste, and mix until well combined
Put potatoes on a separate baking sheet and set aside
Place broccoli and carrots in a large bowl, cover with 1 tablespoon of oil and salt and pepper to taste, and mix until well combined
Put vegetables on the same sheet as potatoes
Bake both sheets in the same oven for 20-30 minutes
Mix potatoes and vegetables periodically during cooking time
Chicken is done when it reaches an internal temperature of 165°F
Potatoes and vegetables are done with they are browned
