Banana Blueberry Muffins

Servings: 12 medium sized muffins

Time: 40 minutes

Ingredients

  • 3 ripe bananas

  • 2 cups old fashioned rolled oats

  • ¾ cups almond milk

  • 1 egg

  • 1 tablespoon baking powder

  • 1 teaspoon vanilla extract

  • ½ teaspoon ground cinnamon

  • ½ teaspoon salt

  • 2 tablespoons chia seeds

  • ½ cup blueberries

Directions

  • Preheat oven to 350°F

  • Grease a 12 cup muffin tray

  • In a  blender or food processor, combine the bananas, oats, milk, egg, baking, powder, vanilla, cinnamon, chia seeds, and salt and blend until well combined and in a batter consistency

  • Add blueberries to batter

  • Pour batter evenly in muffin tray

  • Bake for 30-35 minutes or until the middles are cooked through and edges are golden brown

  • Allow muffins to cool for 5 minutes before taking out of the tray
