Banana Blueberry Muffins
Servings: 12 medium sized muffins
Time: 40 minutes
Ingredients
3 ripe bananas
2 cups old fashioned rolled oats
¾ cups almond milk
1 egg
1 tablespoon baking powder
1 teaspoon vanilla extract
½ teaspoon ground cinnamon
½ teaspoon salt
2 tablespoons chia seeds
½ cup blueberries
Directions
Preheat oven to 350°F
Grease a 12 cup muffin tray
In a blender or food processor, combine the bananas, oats, milk, egg, baking, powder, vanilla, cinnamon, chia seeds, and salt and blend until well combined and in a batter consistency
Add blueberries to batter
Pour batter evenly in muffin tray
Bake for 30-35 minutes or until the middles are cooked through and edges are golden brown
Allow muffins to cool for 5 minutes before taking out of the tray
