Ingredients
1 cup brown rice
1 tablespoon olive or avocado oil
1 red onion sliced in thin strips
1 bell pepper sliced in thin strips
1 can black beans drained and rinsed
1 tomato diced
1 mango peeled and diced
1 avocado diced
Directions
Cook brown rice according to package instructions
Heat1 tablespoon oil in a pan over medium heat
Sauté onion and bell pepper strips in pan until soft (about 8 minutes)
Pour beans into pan and mix in taco seasoning until well combined
In a bowl place brown rice in the bottom ¼ and top with beans, sauteed vegetables, tomato, mango, and avocado
