Ingredients

  • 1 cup brown rice

  • 1 tablespoon olive or avocado oil

  • 1 red onion sliced in thin strips

  • 1 bell pepper sliced in thin strips

  • 1 can black beans drained and rinsed

  • Taco seasoning

  • 1 tomato diced

  • 1 mango peeled and diced

  • 1 avocado diced

Directions

  • Cook brown rice according to package instructions

  • Heat1 tablespoon oil in a pan over medium heat

  • Sauté onion and bell pepper strips in pan until soft (about 8 minutes)

  • Pour beans into pan and mix in taco seasoning until well combined

  • In a bowl place brown rice in the bottom ¼ and top with beans, sauteed vegetables, tomato, mango, and avocado
