Breakfast Bowl

Ingredients

  • ⅓ cup of cooked brown rice

  • 1 tablespoon olive or avocado oil

  • ½ lb of sauteed vegetables (onion, bell pepper, mushrooms, asparagus, zucchini squash, or combination)

  • 2 eggs scrambled 

  • Salt and pepper to taste

Directions

  • Cook brown rice according to package instructions

  • Heat oil in pan and sauté vegetables, mixing frequently until soft and evenly browned

  • Pour egg mixture into pan and cook until at desired consistency, mixing frequently

  • Place cooked rice into the bottom of a bowl, cover with egg and vegetable mixture, and add salt and pepper to taste.
