Ingredients
⅓ cup of cooked brown rice
1 tablespoon olive or avocado oil
½ lb of sauteed vegetables (onion, bell pepper, mushrooms, asparagus, zucchini squash, or combination)
2 eggs scrambled
Salt and pepper to taste
Directions
Cook brown rice according to package instructions
Heat oil in pan and sauté vegetables, mixing frequently until soft and evenly browned
Pour egg mixture into pan and cook until at desired consistency, mixing frequently
Place cooked rice into the bottom of a bowl, cover with egg and vegetable mixture, and add salt and pepper to taste.
