Crispy Potatoes

Ingredients

  • 2 medium sized potatoes chopped into ½ inch squares

    • Sweet, red, golden, russet, or combination

  • 1 tablespoon olive or avocado oil

  • Salt and pepper to taste

Directions

  • Preheat oven to 425°F

  • Place potato squares in a large bowl and mix with oil, salt, and pepper until evenly coated

  • Place potato squares on baking sheet and cook for 20-25 minutes mixing periodically

  • Potatoes are done once they start to brown

  • Pro tip: cook potatoes under broiler for about 5 minutes to make them extra crispy

    • keep a close eye on them so they don’t burn
