Crispy Potatoes

Ingredients
2 medium sized potatoes chopped into ½ inch squares
Sweet, red, golden, russet, or combination
1 tablespoon olive or avocado oil
Salt and pepper to taste
Directions
Preheat oven to 425°F
Place potato squares in a large bowl and mix with oil, salt, and pepper until evenly coated
Place potato squares on baking sheet and cook for 20-25 minutes mixing periodically
Potatoes are done once they start to brown
Pro tip: cook potatoes under broiler for about 5 minutes to make them extra crispy
keep a close eye on them so they don’t burn
