Fast Pickled Cucumbers

Servings: 6-8

Time: 30 minutes

Ingredients

  • 6-8 baby cucumbers, cut into ½ inch slices

  • ¼ cup rice wine vinegar

  • 1 teaspoon salt

  • 1 teaspoon honey

  • 1 teaspoon freshly chopped dill

Directions

  • Toss all ingredients in a medium sized bowl. Mix well.

  • Chill and marinate for 30+ minutes 

  • Refrigerate and enjoy up to 10 days
