Lemon Cookies

Servings: 12 small cookies

Time: 20 minutes

Ingredients

  • 1 egg

  • 2 tablespoons honey

  • 2 tablespoons coconut oil

  • 2 teaspoons lemon juice

  • ½ teaspoon vanilla extract

  • 2 cups almond flour

  • 1 tablespoon lemon zest

  • ¼ teaspoon baking soda

Directions

  • Preheat oven to 350°F

  • In a small bowl, mix together egg, honey, coconut oil, lemon juice, and vanilla

  • In a large bowl, mix together almond flour, lemon zest, and baking soda

  • Pour the liquid mixture into the dry mixture and mix thoroughly

  • Form dough into ping pong sized balls with your hand and place on a parchment paper or non stick mat lined baking sheet

  • Flatten dough balls with the bottom of a glass so they are about ¼ inch thick

  • Bake for 10-15 minutes or until cookie edges start to brown
