Lemon Cookies
Servings: 12 small cookies
Time: 20 minutes
Ingredients
1 egg
2 tablespoons honey
2 tablespoons coconut oil
2 teaspoons lemon juice
½ teaspoon vanilla extract
2 cups almond flour
1 tablespoon lemon zest
¼ teaspoon baking soda
Directions
Preheat oven to 350°F
In a small bowl, mix together egg, honey, coconut oil, lemon juice, and vanilla
In a large bowl, mix together almond flour, lemon zest, and baking soda
Pour the liquid mixture into the dry mixture and mix thoroughly
Form dough into ping pong sized balls with your hand and place on a parchment paper or non stick mat lined baking sheet
Flatten dough balls with the bottom of a glass so they are about ¼ inch thick
Bake for 10-15 minutes or until cookie edges start to brown
