Sauces

The following recipes can be poured on top of your meals or used as dipping sauces.

Pesto

  • Ingredients

    • 2 cups basil leaves

    • 2 cups baby spinach (baby kale or arugula work too)

    • 1 medium tomato

    • 4 cloves of garlic

    • Juice of 1 lemon

    • 1 cup shelled pumpkin seeds

    • Salt and pepper to taste

  • Directions

    • Add basil, spinach, tomato, garlic, and lemon juice to a food processor or blender and process until everything begins to blend together

    • Add pumpkin seeds and process until everything is blended but still chunky

    • Add salt and pepper to taste

Chimichurri

  • Ingredients

    • 1 cup flat leaf parsley (thick stems removed)

    • ½ cup cilantro (thick stems removed)

    • 3 cloves garlic or 1 tablespoon garlic powder

    • 1 teaspoon dried oregano

    • ½ teaspoon salt

    • 1 teaspoon paprika

    • Juice of ½ a lime

    • ¼ cup red wine vinegar

  • Directions

    • Add all ingredients, except lime juice and vinegar, to a food processor and pulse until finely chopped

    • Pour contents into a bowl or jar and add lime juice and vinegar

    • Mix well and let sit for at least 1 hour before using

Tartar

  • Ingredients

    • 1 teaspoon dill

    • 1 Egg

    • ½ cup fat free plain Greek yogurt

    • 2 teaspoons yellow mustard

    • ¼ cup diced pickles

    • Juice of 1 lemon

  • Directions

    • Mix all ingredients in a jar, bowl, or container until thoroughly combined
