Oven Roasted Vegetables
Servings: 2-4
Time: 30 minutes
Ingredients:
1-2 lbs of chopped, hard vegetables
broccoli, cauliflower, brussel sprouts, carrots, or combination
1-2 tablespoons olive or avocado oil
Salt and pepper to taste
Directions:
Preheat oven to 400°F
In a large bowl, combine vegetables, oil, salt, and pepper and mix until evenly coated
Place vegetables on a baking sheet and cook in oven for 20-30 minutes (until vegetables are brown and crispy)
Pro tip: place vegetables under broiler for the last 5 minutes of cooking for extra crispy deliciousness
