Sauteed Vegetables

Servings: 2-4

Time: 15 minutes

Ingredients:

  • 1 tablespoon olive or avocado oil

  • 1-2 lbs of vegetables sliced in thin strips

    • bell pepper, onion, mushrooms, zucchini squash, asparagus, broccoli, carrots, or combination

  • Salt and pepper to taste

Directions

  • Heat oil in a pan over medium heat

  • Add vegetables and sauté, mixing frequently until soft and evenly browned (8-12 minutes)

  • Add salt and pepper to taste
