Taco Plate
Ingredients
2 tablespoons olive or avocado oil
1 red onion sliced in thin strips
1 bell pepper sliced in thin strips
1 lb ground turkey
1 can black beans for plant based
Trader Joe’s Chile Lime Seasoning
1 tomato chopped
1 mango peeled and chopped
1 avocado chopped
Corn tortillas
Directions
Heat1 tablespoon oil in a pan over medium heat
Sauté onion and bell pepper strips in pan until soft (about 8 minutes)
Place onion and bell peppers in a bowl and set aside
Heat 1 tablespoon of oil in pan
Cook ground turkey in pan, breaking up and mixing, until all is browned (about 10 minutes)
Add seasoning to taste and mix until well combined
Place onions, bell pepper, tomato, mango, and avocado on ½ your plate
Place ground turkey on ¼ your plate
Wrap tortillas in a wet paper towel and heat in microwave for 30-60 seconds
Place corn tortillas on final ¼ of your plate
