Taco Plate

Ingredients

  • 2 tablespoons olive or avocado oil

  • 1 red onion sliced in thin strips

  • 1 bell pepper sliced in thin strips

  • 1 lb ground turkey

    • 1 can black beans for plant based

  • Trader Joe’s Chile Lime Seasoning

  • 1 tomato chopped

  • 1 mango peeled and chopped

  • 1 avocado chopped

  • Corn tortillas

Directions

  • Heat1 tablespoon oil in a pan over medium heat

  • Sauté onion and bell pepper strips in pan until soft (about 8 minutes)

  • Place onion and bell peppers in a bowl and set aside

  • Heat 1 tablespoon of oil in pan

  • Cook ground turkey in pan, breaking up and mixing, until all is browned (about 10 minutes)

  • Add seasoning to taste and mix until well combined

  • Place onions, bell pepper, tomato, mango, and avocado on ½ your plate

  • Place ground turkey on ¼ your plate

  • Wrap tortillas in a wet paper towel and heat in microwave for 30-60 seconds

  • Place corn tortillas on final ¼ of your plate
