TFT Scramble

Ingredients
1 tablespoon olive or avocado oil
1 small potato (russet, golden, or red) cut into small squares
1 small zucchini squash chopped
1 small bell pepper chopped
4 eggs scrambled
Salt and pepper to taste
Directions
Heat up oil in large pan over medium heat
Place potato in pan and cook until soft (about 5 minutes), frequently mixing
Add zucchini squash and bell pepper to pan and cook for about 8-12 minutes frequently mixing
Pour egg mixture into pan and cook until at desired consistency, mixing frequently
Place contents of pan onto a plate and add salt and pepper to taste
