TFT Scramble

Ingredients

  • 1 tablespoon olive or avocado oil

  • 1 small potato (russet, golden, or red) cut into small squares

  • 1 small zucchini squash chopped

  • 1 small bell pepper chopped

  • 4 eggs scrambled

  • Salt and pepper to taste

Directions

  • Heat up oil in large pan over medium heat

  • Place potato in pan and cook until soft (about 5 minutes), frequently mixing

  • Add zucchini squash and bell pepper to pan and cook for about 8-12 minutes frequently mixing

  • Pour egg mixture into pan and cook until at desired consistency, mixing frequently

  • Place contents of pan onto a plate and add salt and pepper to taste
