Vanilla Chia Pudding

Time: 3 hours
Ingredients
½ cup of unsweetened almond, soy, coconut, or cashew milk
¼ cup of chia seeds
1 teaspoon vanilla extract
Optional: 1 teaspoon of maple syrup
Fresh fruit
Small handful of sunflower or pumpkin seeds
Directions
Place all ingredients except for fruit and seeds into a bowl or large mason jar
Mix ingredients, let sit for 5 minutes, then mix again
Cover and place in refrigerator for at least 3 hours
Spoon chia pudding into a bowl and top with fruit and seeds
