Vanilla Chia Pudding

Ingredients

  • ½ cup of unsweetened almond, soy, coconut, or cashew milk

  • ¼ cup of chia seeds

  • 1 teaspoon vanilla extract

  • Optional: 1 teaspoon of maple syrup

  • Fresh fruit

  • Small handful of sunflower or pumpkin seeds

Directions

  • Place all ingredients except for fruit and seeds into a bowl or large mason jar

  • Mix ingredients, let sit for 5 minutes, then mix again

  • Cover and place in refrigerator for at least 3 hours

  • Spoon chia pudding into a bowl and top with fruit and seeds
